We just got a great question from Paul Oliva on Facebook asking about some of Lexington's best chefs. You know, Paul, I feel like our restaurant scene has really exploded over the past few years.
It really has, and I think what makes our chefs so special is how they're taking Kentucky flavors and making them their own. Cole Arimes stands out as a real pioneer here - he opened Coles seven thirty-five Main back in twenty twelve, and he's really been pushing our culinary reputation into the national spotlight ever since. What I love about his approach is how he blends Southern and global influences - you might find spanakopita on the same menu as impossible meatloaf smothered in mushroom gravy.
That sounds incredible. Who else should Paul know about?
Chef Paula Endara at Granddam in the Manchester Hotel is doing amazing work - she's a James Beard Foundation bootcamp alum originally from Ecuador. Then there's Chef Jonathan Lundy at Corto Lima, who's bringing creative Latin cuisine with vegetarian, gluten-free, and vegan-friendly options. And Wyatt Sarbacker at Favor Kitchen behind Arcadium - that place has this incredible intimate vibe where you can watch the open kitchen.
What about some of the longtime favorites?
Chef Hannah Coffey at Dudley's has been keeping that Lexington institution fresh since nineteen eighty-one - she does polished American cooking that can handle both a downtown dinner and a lingering wine night. And Johnny Shipley at County Club is doing this fantastic smoked-meat playground where the menu changes monthly but the principle stays the same - smoke, heat, salt. These chefs really understand that Kentucky ingredients deserve Kentucky creativity.
